Remember that casserole you always saw on the table until someone said that terrible word - Celiac? That is when you discover that Campbell's puts wheat in just about everything. Here is a very, very good version that does not use any gluten, tastes great and does not (wait for it) cost a fortune in specialty foods.
Jim's Greenbean Casserole
2.5# (1 kg) fresh greenbeans
2 cans Progresso Vegetable Classics: Creamy Mushroom Soup
2 bags 3.5 oz each Seneca Farms All Natural Crisp Onions
2 tsp gluten free soy sauce
Prepare the greenbeans:
Clean the beans trimming off the ends removing any strings. Cut into 1 1/2" (4 cm) pieces. Steam about 5 minutes until bright green, and tender/crisp. Shock in cold or ice water. Drain.
Prepare sauce:
In an 8x10 or 9x13 inch baking dish, combine soup, soy sauce and 1 bag of the Crisp Onions. Stir in the beans.
Cover with professional / heavy plastic wrap (available at most grocery stores) and then with aluminium foil. Bake about 30 minutes at 350f (177c) or until heated through and bubbling. Remove both covers, top with second bag of Crisp Onions, and serve.
Note: If you cannot find the plastic wrap just cover with foil, and watch a bit more closely. If it begins to dry out, stir in 1/2 C (250ml) milk.
